When you hire any of those three positions, note that you can hire someone you already know, or hire an unnamed NPC.
You can also have multiple ones if absolutely necessary, though most Generation 1 Sims won't know enough guests to make that worth it. When choosing who to hire, you'll see a list of all the people your Sim knows who can qualify for that position. As you see here, the only person Christine knows who qualifies for the mixologist position is Daniel Mosley. If Christine hires an unnamed mixologist, they're guaranteed to be skilled; Daniel may have just started and could mess everything up.

No surprises here! This can take some time and interaction spamming, much like a regular game of The Sims. You can't just get someone to agree to marrying your sim by spamming it with friendly interactions, though.

Musicians will entertain the guests, mixologists will serve them drinks, and caterers will prepare food for them and bake a wedding cake.
Sims with feminine clothing preference are automatically changed into wedding dresses and Sims with masculine clothing preference are changed into tuxedos, but the player is free to change them into other outfits before the ceremony starts. As the story goes with any marriage, it always starts with the future couple putting in the time and effort to get to know each other.
In the Sims this takes the form of your Sim building up a relationship with your chosen Sim by chatting, getting to know each other, telling stories and jokes and other methods to woo the Sim.
As your relationship builds and your relationship bar begins to climb, you can then move onto flirting methods which will trigger the romance options. Make sure you use all the romantic tricks given to you to woo the sim into becoming your significant other and then sealing it with the question about becoming a couple.
After this happens it's up to you where you take it, you could either ask your Sim partner to move in with you first or pop the question straight away. If you find the whole process of reaching the engagement stage too time-consuming and want to jump to marriage straight away, you can use a cheat available to speed the process up.
